Home Made Mayo

Homesteading endeavor for this Saturday – Home Made Mayo. The recipe I have calls for: 1 large egg (room temperature) ~~ 1TBS Lemon Juice or Vinegar ~~1/2 tsp. of yellow or Dijon mustard ~~3/4 C. of oil ~~ salt and pepper to taste. You beat the egg for a minute or two by itself till it turns a nice light yellow. Then add in your mustard, vinegar and salt – mix about 30 seconds to incorporate it – then you start adding your oil by drizzling it in. Keep doing this until all the oil is incorporated…it should be starting to get nice and tight. OK that is the recipe….now with what actually happened LOL

I put in 1 large egg (Room temperature, from my own chickens….so large to me is relative), 1TBS of vinegar, 1/2 tsp of yellow mustard and a pinch of salt. I followed the directions up to this point. Then we started to drizzle the oil in – hubby was working the hand mixer while I was adding the ingredients…drizzle, drizzle, drizzle. After 3/4 cup of oil…nope still not tight. Now any good cooking site will tell an egg yolk cannot absorb more than 3/4 cup of oil….good thing I am not a good cook LOL. I added a 1/4 cup more oil into it….and beat the living tar of it…OK a little tighter now. Added a1/4 cup more oil…now that is more like…looking like Mayo, now for the taste test.

YUCK, nasty, awful…to be honest in general I have always been a miracle whip kind of gal and don’t really like Mayo, but I don’t want to buy things anymore when I can make them at home. So I let my hubby taste test since he really does like Mayo – the look on his face was priceless…too much salt for his liking and he likes salt. So we look to repair the damage….go for the sugar…ended up adding a little less than 1/2 C. of Sugar into it. Yes I know Mayo purist will be cringing right about now…but you all don’t have to eat it we do. So I told hubby to pop the beaters and of course being the boy that he is – had to taste the beater.

Hey come here and taste this…so I taste the part on the beaters….I like it, hey Mikey. Its a keeper…we plan on experimenting with Dijon mustard, lemon juice and olive oil next time. By the way a large egg from my birds – is what others might call extra large or even jumbo. So there you have it…remember a recipe is just a jumping off spot….you need to make it your own.
